1 scallion- cut thin
1 small cucumber- peel and dice small
1 tomato- diced
1 small bell pepper- seed and dice
1/2 cup mozzarella cheese- shredded
1 clove garlic- minced
1 Tbls. olive oil
2 Tbls. red wine, or balsamic vinegar
basil, oregano, pepper to taste
In small bowl, whisk together the oil and vinegar. Mix in garlic, scallions, and seasonings, set aside.
Mix cooled couscous and vegetables. Add cheese and fold gently. Drizzle with dressing as you fold. Refrigerate until serving.
