Special Red Velvet Cake

1/2 cup unsalted butter at room temp.
1-1/2 cups sugar
2 eggs
2-1/2 cup cake flour
2 Tbls cocoa
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
two (1-ounce) bottles red food coloring
2 tsp vanilla

Cream Cheese Frosting:
1 lb cream cheese at room temp
1 cup butter
3 cups powdered sugar
2 tsp vanilla

Preheat oven to 350 degrees. grease and flour three 8inch round cake pans; set aside. Beat butter at medium speed until creamy. Gradually add sugar, beating till light and fluffy. Add eggs one at a time beating just till blended after each addition. In a small bowl combine cocoa, baking soda and salt. Add them to butter mixture alternately with the buttermilk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in the vanilla and food coloring/ Spoon batter evenly into pans. Bake 15-17 minutes or till toothpick comes out clean. Cool. Beat the cream cheese and butter until smooth, gradually add powdered sugar beating until fluffy. Stir in vanilla.

Spread frosting between cooled cake layers, and tops and sides if desired.
Store leftovers in fridge.
