Spinach Stuffed Shells


24 Jumbo pasta shells
1 )32 oz) jar spaghetti sauce with mushrooms
1 (10 oz) pkg frozen chopped spinach-thawed and drained
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1 small onion-diced
1/2 cup grated parmesan cheese
2 tbls chopped parsley
1 tsp dried oregano
dash hot sauce
dash nutmeg
1/4 cup grated parmesan cheese

Cook shells according to directions; drain and set aside.Spoon 1 cup spaghetti sauce into a lightly greased 13x9 inch pan, set aside. Combine next 9 ingredients; mix well. Stuff each pasta shell with 1-1/2 Tbls spinach mixture and arrange in pan. Spoon remaining sauce over pasta, sprinkle with 1/4 cup parmesan cheese and bake at 350 degrees for 30-40 minutes.
