On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Banana Biscotti

2 cups flour
1-1/2 tsp baking powder
1/4 tsp salt
2/3 cup sugar
1/2 cup margarine-softened
2 eggs
1 ripe banana-mashed
1 tsp vanilla
1-1/2 cups "Post Selects Banana Nut Crunch" cereal-crushed
1 square semi sweet baking chocolate

Preheat oven to 375 degrees. Mix flour, baking powder and salt until well blended; set aside. Beat sugar and margarine in large bowl with electric mixer on medieum until light and fluffy. Add eggs, banana and vanilla; beat till well blended. Gradually add flour mixture, mixing well after each addition. Stir in crushed cereal. Divide dough in half with floured hands and place on a lightly floured surface. Roll each half into a 14 x 2 inch log. Place 2 inches apart on baking sheet and bake 25-30 minutes or till lightly browned. Cool on wire rack for 5 minutes. Cut each log into 12 slices and bake cut side up for 12-15 minutes or until slightly dry. Cool. Melt chocolate and drizzle over top. Let stand till chocolate is firm.
