Beat 3 eggs on high speed for 5 minutes. Gradually beat in 1 cup of sugar. Stir in 1 cup pumpkin and 1 tsp. lemon juice. Stir together and fold in: 3/4 cup flour, 1 tsp baking powder, 2 tsp cinnamon, 1 tsp ginger, 1/2 tsp nutmeg, and 1/4 tsp salt. Spread on greased amd floured 15 x 10 pan. Top with 1 cup of finely chopped walnuts. Bale at 375 degrees for 15 minutes.
Turn out onto tea towel sprinkled with powdered sugar. Start at narrow end and roll towel and cake together. Cool. Unroll and spread with filling. Reroll, wrap in foil and freeze.
FILLING: 1 cup powdered sugar, 8 oz cream cheese, 4 Tbls butter or margarine, 1 tsp vanilla. Beat until smooth and spread on cool cake.
