1 lb french bread vut into 1 inch slices
1/2 cup olive oil
1 Tbls balsamic vinegar
3 small garden tomatoes-seeded and chopped
1/4 cup fresh cilantro leaves-coarsley chopped
1/4 cup finely chopped onion
1/4 tsp salt
1/4 tsp pepper
1/4 cup shredded mozzarella cheese
Place bread on ungreased baking sheet; brush with 1/4 cup oil, bake at 325 degrees for 10-12 min. or till golden brown. Meanwhile in small bowl, whisk the binegar and remaining oil. Stir in the tomatoes, onion, cilantro, salt and pepper. Spoon about 1 Tbls onto each slice of bread, sprinkle with cheese and serve imeediately.
