1 lb ground beef
1/4 cup dry breadcrumbs
1/2 tsp onion powder
1/2 tsp salt-divided
1 egg
2 tsp vegetable oil
1 can (14.5 oz) chicken broth
1/4 cup water
1/4 cup ketchup
8 oz wide egg noodles
1/2 cup sour cream
1 cup shredded cheddar cheese
Combine hamburger, breadcrumbs, onion powder 1/4 tsp salt and egg; mix well. Shape into aproximately three dozen 3/4 inch meatballs.
Heat oil in large skillet coated with cooking spray. Add meatballs and cook till brown on all sides. Drain well. Combine chicken broth, water, ketchup and remaining 1/4 tsp salt; add to skillet. Bring to boil; stir in noodles, making sure they are covered by the liquid. Reduce heat, cover and simmer 10-15 minutes or until noodles are done. Stir in sour cream and cheese. Cook till heated through, and mixture thickens (about 5 min) Do not boil.
