On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Individual Brunch Cassaroles

3 cups shredded raw potatoes
3/4 cup diced onion
1/2 cup diced celery
1/2 cup diced green pepper
2-4 Tbls cooking oil
4 eggs
1/2 tsp salt
1/4 tsp pepper
1 cup shredded cheddar cheese
1/2 pound sliced bacon-cooked and crumbled
1 can (4 oz) mushroom stems and pieces-drained

In a large skillet, saute potatoes, onions, celery, and green pepper in 2 Tbls oil until veggies are just tender. If needed add extra oil to keep from sticking. Remove from heat. In large bowl, beat eggs, salt, and pepper. Add cheese, bacon, and mushrooms; mix well. Stir in potato mixture. Pour into 4 greased individual baking dishes. Bake uncovered at 350 degrees for 25-35 minutes or until knife in the middle comes out clean. Let stand for 5 minutes before serving.
