2 cups uncooked brown rice
1 Tbls corn oil
6 garlic cloves-finely chopped
1 lb thin pork chops (no more than 1/2 inch thick)
3/4 cup water
3 Tbls cider vinegar
1 Tbls soy sauce
1 bay leaf-broke in half
Cook rice according to directions. Meanwhile, in a large skillet heat oil over medium heat. Add garlic and cook 1 minute, stirring constantly. Add pork chops and cook 2 minutes on each side to brown slightly. Stir in water, vinegar, soy sauce and bay leaf. Partially cover and simmer for 15 minutes or till pork chops are cooked through and tender. Discard bay leaf. Serve the pork chops and pan sauce over rice.
