1 cup flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 cup quick oatmeal
1 cup buttermilk
1 egg-slightly beaten
1/2 cup brown sugar
1/3 cup butter-melte
additional brown sugar (opt)
additional oatmeal (opt)
Grease twelve 2 1/2 inch muffin cups (or line with baking cups) Combine flour, baking powder, salt, and baking sode; set aside. Combine oats and buttermilk; add egg and mix well. Stir in the 1/2 cup brown sugar and butter until combined. Stir in flour mixture until moistened. Spoon into muffin cups, filling about 2/3 full. sprinkle muffin tops of muffins with additional brown sugar and oatmel if desired. Bake at 400 degrees for 18-20 min. or till toothpick inserted comes out clean. Cool for 5 min. and serve warm.
