1 whole chicken
1/2 stick butter
1 chopped onion
1 cup chopped celery
1 can peas and carrots
1 cup chicken broth
1 tbls flour
biscuit mix for 10 biscuits
Boil chicken until tender and remove from bone and cut into small pieces. Discard skin and bones. In oven safe pan, melt butter. Add onions and celery and cook over low heat for 15 min. Add peas and carrots. Mix together broth and flour, add to vegetables. Add chicken and salt and pepper to taste. Top with bisuits and bake at 325 degrees until brown.
