On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Tortellini Bake

1 pkg (10 oz) refridgerated cheese tortellini
1 Tbls olive oil
1 small zucchini-diced
1 yellow squash-diced
1 onion-diced
1 sweet red pepper-diced
1 tsp. dried basil
1/2 tsp.pepper
1/2 tsp.salt
1 cup mozzarella cheese-shredded
1 cup light cream

Cook tortellini according to package directions. Meanwhile, heat olive oil in skillet and cook the zucchini, squash, red pepper, onion and spices until veggies are crisp-tender. Drain tortellini and rinse in hot water; combine vegetable mixture, mozzarella, and cream in a 1-1/2 qt baking dish and bake uncovered at 375 degrees for 20 min. or until heated through.
