On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Toffee Oat Cookies

3/4 cup butter (no substitute)
1 cup packed brown sugar
3/4 cup sugar
2 eggs
3 tsp. vanilla
2-1/4 cup flour
2-1/4 cup old-fashioned oats
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 pkg (10 oz) English toffee bits

In mixing bowl, cream butter and sugars. Add eggs one ata time, beating well after each addition. Beat in vanilla. Combine the flour, oats, baking soda, baking powder, and salt; gradually add to the creamed mixture. Stir in toffee bits. Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet and bake at 375 degrees for 10-12 min. or till golden brown. Cool for 1 min. before removing from pans.

I made these for a church function and we really liked them. No need to let sit on the cookie sheet for 1 min before removing..I'm not that patient :o)
