On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Carnitas Tacos

2 cans (15 oz each) pinto beans
1 can (10 oz) Mexican style diced tomatoes
1 tsp McCormick Mexican seasoning
3 cups left over pork roast-shredded
3/4 cup juice from pork roast, or chicken broth, or water
1 pkg taco seasoning
12 small (6 inch) flour tortillas-warmed
Shredded lettuce, Shredded cheese, cilantro sprig, chopped onions for topping (optional)

Combine pinto beans, tomatoes, and Mexican seasoning in a medium saucepan. Simmer over medium heat for 7-8 minutes. Meanwhile, combine pork. juice, and taco packet in a large skillet. Bring to boil and cook for 5 minutes. Make tacos by topping each tortilla with a spoonful of beans and some pork. Serve with your choice of toppings.
