Summertime Cookies

1/4 cup butter-soft
3/4 cup firmly packed brown sugar
3/4 cup sugar
1 tsp. vanilla
2 large eggs
1 1/2 cups sweetened flake coconut
3 tsp grated lime rind
2 Tbls.lime juice
2 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 (12 oz) pkg. white chocolate morsels
1/2 cup chopped macadamia nuts

Beat first 4 ingredients at medium speed until creamy. Add eggs, beating until blended. Add coconut, lime rind, lime juice and beat until blended. Combine flour, baking soda, and salt in a small bowl. Gradually add to butter mixture while beating. Stir in the morsels and the nuts. Drop by rounded tablespoonfuls onto ungreased cookie sheet and bake at 375 degrees for 10-12 minutes, or until lightly browned.
