5 cups water
2 pkgs (3 oz each) ramen noodles
1/2 lb boneless pork-cut into thin strips
2 Tbls cornstarch
2 Tbs soy sauce
1 Tbls vegetable oil
1/2 tsp ground ginger
1 pkg (16 oz) frozen sugar snap stir fry vegetables
In large saucepan bring 4 cups water to a boil over high heat. Add noodles without seasoning packets and boil 2-3 minutes or till just tender. Rinse noodles with cold water, drain and set aside. In small bowl, combine pork and cornstarch; toss to coat well and set aside. In another small bowl combine remaining one cup of water, soy sauce and one packet of seasoning from ramen noodles (you won't need the other packet) mix well. In large skillet or wok heat oil over medium high heat. Add pork and ginger and cook about 5 minute or till pork begins to brown, stirring constantly. Stir in soy sauce mixture and frozen vegetables. Cover and cook 3-5 minutes or till veggies are heated through. Stir in noodles and cook till all heated through. Serve immediately.
