On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Breakfast Bake

1-1/2 cup egg substitute
1/2 cup milk
3-1/2 cups frozen O'Brien hash browns-thawed
1-1/3 cup shredded cheddar cheese
1/2 cup chopped sweet onion
4 Tbls crumbled cooked bacon-divided
1/2 tsp salt
1/4 tsp pepper
1/4 tsp chili powder
4 green onions-chopped

In a large bowl, whisk the egg substitute and milk. Stir in the hashbrowns, 1 cup cheese, onion, 2 Tbls bacon, salt, pepper and chili powder. Pour into an 8 inch square pan coated with nonstick spray. Bake at 350 degrees for 45-50 minutes or until a knife inserted in the center comes out clean. Sprinkle with remaining cheese and bacon, bake 3-5 minutes longer till cheese melts. Sprinkle with green onions. Let stand for 5 minutes before cutting.
