On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Mexican Hats-KIDS


1 lb ground beef
1 onion-finely diced
2 Tbls taco seasoning mix
1 Tbls water
15 oz bag corn chips
2 cups shredded lettuce
1/2 cup chopped tomato
1/4 cup sliced black olives
garnish; sour cream and salsa

Cook beef and onion in a skillet, stirring to crumble until onion is soft and beef is no longer pink. Drain and place back in skillet. Add seasoning mix and water, stir well and simmer for 5 minutes. Cover the bottom of 4 plates with corn chips (this is the bottom of the "hat") Using a small ice cream scoop, place a scoop of the meat mixture in the center of the plate (this is the "top" of the hat). Divide the lettuce, tomato and olives evenly and spinkle around the "brim" of each hat. Serve with salsa and sour cream.
