1 box manicotti-uncooked
2 C. ricotta cheese (15 oz container)
2 C. mozzarella cheese-shredded
1/4 parmesan cheese-grated
2 T. fresh parsley-chopped
1/2 tsp salt
1/4 tsp pepper
3-1/2 (32oz) spaghetti sauce
Cook macaroni according to according to directions and drain. Cool in single layer on waxed paper to prevent pasta from sticking. Combine cheeses , parsley, salt and pepper for filling. Spoon into manicotti. Spread a thin layer of sauce on bottom of a 13 x 9 baking pan. Arrange manicotti in a single layer over sauce. Cover with remaining sauce. Cover with aluminum foil and bake at 350 degrees for about 40 min. Remove foil and bake 15 minutes longer.
