1/2 to 3/4 lbs fresh spinach
2 Tbls olive oil
1 small garlic clove-minced
3/ tsp minced basil
1/4 cup grated parmesan cheese
Remove stems from spinach. Wash leaves and tear into bite sized pieces. Place spinich in a large saucepan, add enough water to cover spinach. Cover with lid and cook for about 3 min. Drain spinich well. heat oil in medium skillet; add garlic and saute 3-5 min. Stir in basil and drained spinach. Cook mixture until heated, remove from heat and add parmesan cheese.
