Eggplant Sausage Bake

3 large eggplant-peeled and cubed
1/2 pound bulk hot pork sausage
1 cup chopped celery
1 cup chopped onion
3 green onions with tops-chopped
1 (6 1/4 oz) pkg stuffing mix
1/2 tsp pepper
2 cups shredded cheddar cheese

Cook eggplanr, coverd with a small amount of water 10 imn. or until tender. Drain; set aside. Saute sausage, celery, onion in a skillet until the sausage is cooked and vegetables are tender. Drain and set mixture aside. Prepare stuffing mix according to directions. Combine stuffing, eggplant, sausage mixture and pepper; mix well. Spoon into a greased 13x9 inch baking dish. Cover and bake at 350 degrees for 15 min. uncover, top with cheese and bake an additional 5-10 min. or until cheese melts.
