Brunch Enchilada's

2 cups cubed fully cooked ham
1/2 cup chopped green onion
10 flour tortillas (8 inch)
2 cups shredded cheddar cheese-divided
1 Tbls flour
2 cups half and half cream...or milk
6 eggs-beaten
1/4 tsp salt (opt)

Combine ham and onions; place about 1/3 cup down the center of each tortilla. Top with 2 Tbls cheese. Roll up and place seam side down in a greased 13X9 inch baking dish. In a bowl, combine flour, cream, eggs and salt, stir or whisk until smooth. Pour over tortillas. Cover and refridgerate for 8 hours or overnight. Remove from the refridgerator 30 min. before baking. Cover and bake at 350 degrees for 25 min. Uncover and continue baking for 10 min. Sprinkle with remaining cheese and bake for 3-4 min. longer or until cheese is melted. Let stand 10 min before serving.
