On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Mexicali Cornbread Con Queso

1 pkg (8.5 oz) yellow cornbread mix
2 cups shredded cheddar or montery jack cheese-divided
1 pound hamburger
1 pkg taco seasoning
1 can (15oz) pinto beans-drained
sour cream
chopped tomatoes

Prepare cornbread mix according to directions, adding 1 cup of the shredded cheese to batter. Pour batter in equal amounts into 2 seperate greased 9 inch round cake pans. Bake at 350 degrees for 8-12 min; cool. brown hamburger; drain. Add beans, seasoning mix and water according to seasoning mix pacakge directions. Continue cooking until slightly thickened. Place one cornbread round on the serving platter; top with half of the meat mixture and 1/2 cup cheese. Place the other cornbread round on top; cover with remaining meat mixture and cheese. Cut into wedges to serve, top with chopped tomatoes and sour cream.
