1 loaf (20 inches) french bread-cubed
1/4 cup chopped onion
1 tsp minced garlic
1 Tbls butter
1 cup beer (nonalcoholic is fine too)
4 cups shredded cheddar cheese
1 Tbls flour
2-4 Tbls half-and-half cream
Place bread cubes in a baking pan and toast at 450 degrees in the oven for about 7 min. or until lightly crunchy, stir them a couple of times while toasting. Meanwhile, in a small saucepan saute onion and garlic in butter until tender. Stir in the beer and bring to a boil; reduce heat to medium low. Toss the cheese and flour then stir into saucepan and heat until melted. Stir in 2 Tbls cream. Transfer to a small fondue pot or slow cooker; keep warm. Add additional cream if fondue thickens. Serve with the toasted bread cubes.
