3 cups flour
3 cups sugar
2-1/2 tsp cinnamon
1-1/2 tsp baking soda
1 tsp salt
1-1/2 cups vegetable oil
4 eggs-lightly beaten
1 tsp vanilla
3 cups shredded zucchini
1 cup walnuts-chopped
Frosting:
1 pkg (8oz) cream cheese-softened
1/2 cup butter or margarine-softened
4 cups (1 lb) powdered sugar
1 tsp vanilla
In a mixing bowl, combine flour, sugar, cinnamon, baking soda and salt. In a separate bowl, mix oil, eggs and vanilla; add to flour mixture and beat. Add zucchini; mix well. Fold in nuts. Pour into three well greased 9 inch baking pans. Bake at 325 degrees for 30-40 min. or until cake tests done. Let stand for 10 min. remove from pans and cool. For frosting, beat cream cheese and butter; blend in sugar and vanilla. Beat until smooth, frost between layers, sides and top of cool cake.
