On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Parmesan Chicken

3/4 cuo coarsely crushed saltines
1/3 cup grated parmesan cheese
1/2 tsp salt
1/2 tsp celery salt
1/2 tsp paprika
1/4 tsp onion salt
3 Tbls. evaporated milk
3 Tbls. vegetable oil
1 broiler-fryer chicken (about 3-1/2 lbs) cut up

Combine first 6 ingredients in a shallow dish. In another dish, combine the milk and oil. Dip chicken into the milk mixture, then roll in the cracker mixture. Place chicken, skin side up in a shallow baking pan. Bake uncovered at 375 degrees for 1 hour or until chicken is tender and no longer pink.
