1-1/2 lbs. bulk pork sausage
1/2 cup chopped onion
1 can (16 oz) refried beans
1/2 tsp. chili powder
1/2 tsp. ground cumin
1 pkg. (8 oz) manicotti-cooked and drained
1 can (15 oz) tomato sauce
1 can (40z) chopped green chilies (opt)
2 cups shredded cheddar cheese
In a skillet, cook sausage and onion until sausage is no longer pink and onion is tender; drain. Stir in beans, chili powder and cumin. Stuff into manicotti shells; place in a greased 13 X 9 inch baking dish. Combine tomato sauce, and chilies and pour over manicotti. Sprinkle with cheese. Bake uncovered at 350 degrees for 45-60 min. or until heated through.
