3 cups fresh or frozen rhubarb-chopped in 1/2 inch pieces
1/4 cup sugar
3 Tbls. water
1 carton (8 oz) strawberry yogurt
1/2 cup unsweetned applesauce
1/4 cup fresh strawberries-chopped
2 drops red food coloring (opt)
In saucepan, bring the rhubarb, sugar and water to a boil. Reduce heat and simmer uncovered for 10-15 min. or until mixture is blended and thick. Cool. Set aside 3/4 cup (save the remaining rhubarb for another use). In a bowl combine yogurt, applesauce, strawberries, reserved rhubarb mixture and food coloring. Fill popsicle molds, or small disposable cups with1/4 cup of fruit mixture, top with holders or insert popsicle sticks into each cup. Freeze. makes 8 ice pops
