On this blog you will find easy recipes that don't require a lot of strange ingredients that nobody has on hand. Tomatoes and Cukes

2 Tbls olive or vegetable oil
1 Tbls vinegar
1 Tbls minced fresh parsley
1/2 tsp salt
1/4 tsp pepper
3 medium tomatoes-sliced
1/2 large cucumber-sliced
leaf lettuce (opt)

In a small bowl, whisk oil, vinegar, parsley, salt and pepper. On a serving plate, arrange tomatoes and cucumber slices nicely over bed of lettuce. Drizzle with the vinaigrette.

Oh my gosh, this sounds yummy and it's just what I've been looking for. The two things in my garden that are in overabundance are tomatoes and cucumbers!
